One of the easiest and best known tomato-based recipes, the caprese salad can easily constitute a delicious snack, as well as a full-on meal. Its versatility is only matched by its unmistakable Italian-infused flavour.
You will need:
– 1-2 medium sliced tomatoes
– A handful of finely chopped basil
– A piece of thinly sliced fresh mozzarella
– A few capers
– Extra virgin olive oil
– Salt and pepper
After preparing all the ingredients, take a platter and start arranging layers: one of tomatoes, one of cheese, and so on. Sprinkle a bit of olive oil, salt and pepper on each layer, and season with basil and capers. Enjoy!
Tomato and yoghurt salad
This simple, yet creative Indian-inspired salad will make an interesting addition to your family’s meals, because the balance of spices will satisfy even the pickiest eaters.
You will need:
– 1 large tomato
– 3 tablespoons of plain, smooth yoghurt
– ¼ teaspoon of cumin seeds
– ¼ teaspoon of mustard seeds
– ½ teaspoon dried coconut flakes
– ¼ teaspoon ground coriander seeds
– ¼ teaspoon ground fennel seeds
– ¼ teaspoon turmeric
– 2 tablespoons olive oil
– Salt and herbs to taste
Phase 1: Slice the tomato in small pieces, making sure you don’t waste any seeds or juice. Whip the yoghurt until it becomes smooth and uniform, pour it over the tomatoes, and season with salt and herbs of your choice.
Phase 2: Put the olive oil in a small sauce pan and let it simmer for a bit. When the oil is hot enough, drop a cumin seed in the pan: if it pops or sizzles, add the rest of the cumin and mustard seeds. Leave them on for a few seconds and then add the coconut, along with the rest of the powdered spices. Stir well and remove the pan from the heat.
Phase 3: Let the mix cool for a minute, then pour it over the tomato and yoghurt. Mix well and serve fresh.
